Breakfast

I only have a few breakfast dishes. The French Toast and grits are so easy to make in the rv.  Send me your favorite recipe. 

Breakfast Casserole-    (My friend Drew)
​Seasoning:  1/2 tsp mustard
                    1/2 tsp paprika
                    1 tsp salt
1/2 lb Shredded Sharp Cheddar Cheese
1 Cup Sour Cream
1 lb Cooked Crumbled Sausage - well drained
10 - 12 Eggs


NOTE:

​Can be made previous night and refrigerate. Be sure bottom of casserole is room temp before baking.

This is the casserole I make every Christmas Eve for Christmas morning breakfast.
​In small bowl - mix seasonings with sour cream - set this aside

In larger bowl - break eggs and mix  - set this aside

In 10-6-2" casserole dish cover bottom with half of shredded cheese

Dab 1/2 of sour cream mixture over the cheese

Next layer -  spread sausage on top

Pour eggs over the sausage

Dab the remaining sour cream mixture on top of eggs

Sprinkle remaining shredded cheese on top as the last layer

Bake 325 to 350 degrees for 30 to 40 min   serves 12

French Toast in a Mug - (https://princesspinkygirl.com/french-toast-mug)
1 piece buttered bread
1/4 cut milk
1 egg
2 tablespoons syrup (I use honey)
1 teaspoon ground cinnamon
a pinch of salt
1 tablespoon of chocolate chips-optional
Powdered sugar-optional
​Cinnamon sugar-optional


​NOTE:  This is so easy and delicious
Mix together the egg, milk, syrup, cinnamon and salt into a microwavable mug

Cut off the crust of the bread and cube. (I just leave crust on)

​Submerge the bread within the egg mixture in the mug.

Stir in any options you choose.

Sprinkle cinnamon sugar on top.

MIcrowave for a total of 2 minutes stopping every 30 seconds (count to 10 and start again so it doesn't explode)

Let cool for about 1-2 minutes

​Sprinkle powdered sugar on top (again optional)

Grits in the Microwave -  (Quaker)
Two Servings:

1 1/2 cup water
1/2 cup quick grits
pat of butter

One Serving:
3/4 cup water
1/4 cup grits


Mix all ingredients into a microwavable bowl.

Cook on high 2 minutes
stir
Cook 2 more minutes on high

Lower cook time if making just one serving.

​Perfect grits every time with no mess or fuss.
