Main Meat or Fish

Here are a few of my favorites. The crock pot recipes are great for using on the rv.

Chicken Pot Pie - (Bisquick Box)
1 can Veg-All or 2 cups frozen veggies thawed 
1 can cooked chicken or 1 can chicken
1 can Cream of Chicken Soup
1 cup Bisquick
1/2 cup milk
1 egg - beaten
Mix veggies, chicken and soup in bowl

In separate bowl, mix Bisquick, milk and eggs

Pour veggie mixture in glass casserole dish

Pour batter over veggie mixture

Bake at 400 degrees for 30 min

4 servings

Chicken, Easy Parmesan - Not sure where this recipe came from)
1/2 cup Grated Parmesan cheese
1 envelope Italian Salad Dressing Mix
6 Boneless skinless chicken breast halves (about 2 lbs)
1/2 tsp garlic powder
Mix cheese, garlic powder and salad dressing mix.

Moisten chicken with water; coat with cheese mixture

Bake 400 degrees for 20 - 25 min or until chicken is done

makes 6 servings - 230 calories



Corned Beef and Cabbage in Crock Pot - (bigoven.com)
4 cups hot water
2 tbls cider vinegar
2 tbsp sugar
1/2 tsp freshly ground pepper
2 medium onions - cut into wedges
1 (3 lb) pkg corned beef round or brisket - with spices
8 small white or yellow potatoes - cut into quarters
1 head green cabbage - cored and cut into 10 wedges
In a 6-qt slow cooker, combine the water, vinegar, sugar, pepper and onions - mixing well.

Place the corned beef in the mixture.
Scatter the potatoes over the top and along the sides.
Cover and cook on High - 4 hours.

Remove the lid and scatter the cabbage wedges over the top.
Cover and continue cooking on High 3 - 4 hours longer or until beef is tender.

To serve, carve the beef into slices and serve with the cabbage and potatoes with some of the cooking liquid spooned on top of the beef to keep it moist.

Cornish Hens in Crock Pot - (slowcookeradventures.com)
2 Cornish Hens
1/2 Cup white wine or chicken broth
4 tbsp butter cut into pieces
2 tbsp Olive Oil
Salt
Pepper
Garlic powder
Sage to taste
Warm the olive oil in skillet

Salt and pepper the top of the Cornish hens
Place them breast side down in skillet
Salt and pepper the belly of Cornish hens

Pour wine into bottom of crock pot. Place the browned hens on crock pot. 
Season with sage and garlic powder. 
Place pieces of butter on top of hens. 

Cook on low 7-8 hours or on high 4-5 hours.

Meatloaf - (Kroger Wheat Saltine Box 2-28-09)
2 lbs Ground Meat (beef, veal or pork)
1/2 Cup Kroger Wheat Saltines Crushed
1 Envelope Onion Dip Soup Mix
1 Tbsp Worcestershire Sauce
1/2 Cup Undiluted evaporated Milk
2 Eggs slightly beaten
1 1/2 Tbsp Lemon Juice
1/2 Tsp Salt
1/4 Tsp Pepper
1/2 Cup BBQ Sauce
Combine all ingredients except BBQ Sauce

Pack firmly into 9x5x3" loaf pan then invert into shallow pan and remove loaf pan.
Pour 1/4 Cup BBQ Sauce on Top

Bake 350 degrees for 1 - 1 1/4 hours

Allow to stand a few minutes before slicing.   8 servings

Roast in Crock Pot - (food.com)
1 (4-5 lb) beef roast
1 (1 1/4 oz) pkg brown gravy mix, dry
1 (1 1/4 oz) pkg dried Italian salad dressing mix
1 (1 1/4 oz) pkg ranch dressing mix, dry
1/2 cup water
Place beef roast in crock pot.

Mix the dried mixes together in a bowl and sprinkle over the roast.
Pour the water around the roast.

Cook on low of 7 - 9 hours

Ribs in Crock Pot  - (bigoven.com)
ribs
1 bottle BBQ sauce (or up to 2 bottles)
cajun seasoning
salt
pepper
Spray oil on crock pot so ribs don't stick

Place frozen ribs in crock pot 
sprinkle seasoning on top

Pour one to two bottles of bbq sauce on top.
Cook for 6 to 8 hours.

Shrimp and Grits - (Natalie Dupree Magazine)
4 tbsp butter
Salt
Pepper
1 cup grits
1/4 cup heavy cream
1 1/2 lbs Kielbasa thinly sliced
4 oz country ham cut into strips
8 sea scallops
12 medium shrimp deveined
2 tomatoes, seeded and chopped
1/4 tsp garlic finely chopped
1/4 cup chopped scallions
1 pinch cajun seasoning

NOTE: This recipe is a little work but it sure is delicious.
GRITS
In a heavy saucepan, bring 4 cups water to a boil. Add 1 tbsp butter and 1/4 tsp salt. Stir in grits. Lower heat, cover and simmer, stirring frequently until tender. 

Stir in the cream and 1 tbsp butter.

SEAFOOD AND MEAT
In a skillet, heat 1 1/2 tsp butter over medium heat. Add kielbasa and ham and cook until golden, 3 min. transfer to a plate.

Melt 1 1/2 tsp butter in the skillet, add half the scallops and shrimp and cook, turning once, for 3 min; transfer to the plate.

Repeat with 1 1/2 tsp butter and the remaining scallops and shrimp.

Add the remaining 1 1/2 tsp butter to the skillet.  Add the tomatoes, garlic, scallions, cajun season and 1/4 cup water and cook until softened.

Stir in the reserved seafood and meat and cook until heated through.

Season with salt and pepper

Turkey in Crock Pot -  (Not sure, probably Facebook. I have used this recipe and it's so easy)
1 turkey breast
1 box recipe secrets garlic and herb flavor (or whatever spices you have on hand)
8 oz fresh mushrooms sliced
1/2 cup water
Place breast in crockpot. add seasoning and mushrooms

Slowly pour water over all

Cook 10-12 hours on low or per crockpot instructions
