Mexican Dishes

Here are a few of my favorite Mexican recipes. They are not guilt free but very good.

Beef Enchilada -  (From the Old El Paso Can)
                                                                               
1 lb ground beef
1/2 packet Taco Seasoning (optional)
1 can (10 oz) Old El Paso enchilada sauce Red
1 can (10 oz) Old El Paso enchilada sauce Green
1 1/2 cups shredded cheese (6 oz)
1 pkg Old El Paso flour toritillas (6 inch)

Sour Cream
Salsa
13x9" glass baking dish
Cook beef and drain
Stir into beef 3/4 cup of enchilada sauce, 
1 cup of cheese and taco seasoning.

Spoon filling into tortillas and roll up.
Place fortillas seam side down into baking dish

Pour remaining sauce over top
Sprinkle with remaining 1/2 cup cheese on top

Makes 12 enchilada 
Bake 375 degrees - 15 - 20 min
Serve with Sour Cream and Salsa

Mexican Lasagna - (womansday.com)
                                                                                   
Ground beef (optional) 
2 tsp Olive Oil
1 1/2 cups chopped onion
1 lb zucchini - diced - about 3 cups
1 1/2 tsp ground cumin
1 can (14 1/2 oz) diced tomatoes with chiles
1 can (15 oz) black beans - rinsed
1 can (11 oz) corn niblets - drained
1 can (10 oz) mild enchilada sauce
1/2 cup chopped cilantro
5 (8-in) whole - wheat flour tortillas
1 1/4 cups shredded cheddar cheese

Sour cream for garnish
Salsa for garnish

3-qt round baking dish with nonstick spray
Heat oil in large nonstick skillet over medium heat. Add onion and sauté add ground beef to brown.  

Add zucchini and cumin and sauté 5 min or until zucchini is crisp-tender

Stir in tomatoes, beans, corn and enchilada sauce - bring to simmer.
Remove from heat and stir in cilantro

Put 1 tortilla in baking dish. top with 1 1/2 cusp zucchini mixture
Sprinkle with 1/4 cup cheese.
Repeat layers 4 times

Cover with foil and bake 20 to 25 min until bubbly around the edges and cheese is melted.
Cut into wedges and serve with sour cream and salsa

Nacho Dip - (Cookin With Love)
​1/2 pkg Taco Seasoning Mix
1 16oz Can Refried Beans
Olives - sliced
Onion - small - diced
1 1/2 Cup Shredded Mozzarella Cheese
8 oz Sour Cream
2 tomatos - Diced
4 oz Can Chopped Green Chilis
Can add some salsa in the layers if desired
Nacho Chips
Mix refried beans and taco seasoning -
Heat in microwave for 1 min to mix
Put Bean mixture in bottom of casserole dish
Layer on top - Olives, Onion and Cheese
Spread sour Cream on top
Garnish with Tomato and chills

Serve with Nacho Chips

Taco Bake - (This was on Facebook)
                                                                                    
1 pound ground beef
1 packet taco seasoning
* water as called for on back of seasoning packet
3 large flour tortillas (8-inch size)
1/2 cup Salsa Con Queso
1 1/2-2 cups shredded Mexican cheese blend

This recipe is so easy and most anything can be added such as black olives
Brown and crumble ground beef. Drain excess grease.

Add in taco seasoning and water (following directions on back of seasoning packet).

Once the taco meat is ready, turn off heat and add in 1/2 cup salsa con queso.
Give it a good stir until thoroughly combined.

Preheat oven to 350F degrees.
Spray an 8-inch round baking pan with nonstick cooking spray.
Layer the bottom of the pan with a flour tortilla.
Now add about 1/3 of the ground beef taco filling on the the first layer.
Then add 1/3 of the shredded cheese.
Continue until you are done with all the layers: another tortilla, more taco mixture, more cheese.

Bake at 350F degrees for about 15-20 minutes.
Until cheese is melted and edges are slightly golden brown.
Allow to cool for a couple of minutes.
Then slice and serve.

I like mine with sour cream and diced tomatoes on top.
