Desserts

Here are a few of my favorite dessert recipes. The Lazy Girl Cobbler is my grandmother's recipe and so delicious but not low calorie.

1-2-3 Cake - (Real Awesome Country Living - John Bliss Facebook)

3 Tblsp Mix
2 Tblsp Water

You need two boxes of cake mix. One can be any flavor you prefer, but the other MUST be Angel Food cake mix.

Mix them together (shake them in a big bowl).

Then simply store the mixture in an airtight container until you get the urge for dessert.

Then just put three Tbsp. of the dry mixture in a big coffee mug and stir in 2 Tbsp of water.

Microwave it for one minute and you will have a single serving of cake!

Top with fruit, ice cream, whipped cream or whatever! Awesome for those of us who want something sweet every now without making an entire cake!

Coconut Pie- (Homemaking.com)
​
1/2 cup Bisquick
3/4 cup sugar
4 eggs
2 cups milk
1 cup flaked coconut
1 tablespoon butter, softened


Combine all ingredients and pour the mixture into a 9" buttered pie pan.

Bake at 400 degrees Fahrenheit for 25 to 30 minutes, until the custard sets.

Like magic, this pie will layer into crust, custard and coconut topping!

I like to sprinkle coconut on the top after baking.

Cookie - Keto Oatmeal with No Oatmeal - (sugarfreelondoner.com)
1 cup Almond Flour or ground almonds (I use ground almonds)
1/2 cup unsalted butter - melted then cooled
3/4 cup flaked almonds  (1/2 for the cookie and 1/4 for topping)
1/3 cup coconut flakes (I use sweetened)
1/4 cup granulated sweetener (I use much less because I use sweetened coconut flakes)
1 large egg - cold
1 tsp baking powder
1 tsp vanilla extract
1/2 tsp salt - optional  (use half or less or they taste salty)
1/2 tsp xanthan gum - optional (i didn't use)


NOTE:
I used a small food processor and ground a cup of almonds. It just takes a minute and it's cheaper than buying Almond Flour.

These cookies are really delicious. They will only keep for 4 or 5 days,  but will freeze for up to 3 months. 
Preheat the oven to 350F / 180C / 160 fan and line a baking tray with greaseproof paper.

Using a sharp knife, chop 1/2 cup sliced almonds and the coconut flakes to resemble the size of oats. Option to use a food processor and pulse if you prefer.

Mix all the dry ingredients together in a mixing bowl (almond flour, erythritol, xanthan gum, baking powder, salt, chopped flaked almonds and coconut. Stir to combine.

Add the melted butter and egg and mix to form a dough.

Roll the mix into 9 balls.

Chop the remaining 1/4 cup of almonds.

Place the balls on a baking tray and press crushed almonds into the top.

Flatten the cookies and  shape the edges with your figures to remove cracks.

Bake for 12-15 minutes until slightly golden.

Cookie - Keto Peanut Butter Almond Flour Cookies - (sugarfreelondoner.com)
1 cup almond flour or ground almonds
1/2 cup peanut butter smooth, soft
1 egg
1/4 cup granulated sweetener
1 tsp baking powder
1 tsp vanilla extract
sea salt, for sprinkling on top​ (optional)

​NOTE:

Preheat the oven to 180 Celsius / 350 Fahrenheit. 

Put all ingredients in a bowl and stir together with a fork until a dough forms.

Form a large ball and cut into 8 slices.
Make 2 dough balls from each slice (20 grams each) and put on a baking sheet lined with parchment paper.

Flatten each cookie dough ball into 1 cm thick / 5 cm diameter disks using a fork, making a criss cross pattern. Sprinkle with sea salt. 

Bake for 8-10 minutes. Remove from the oven and let cool completely before touching.

Lazy Girl Cobbler - (My Grandmother)
                                                                               
1 can pie fruit (apple is my favorite)
1 stick butter
1 cup sugar
1 cup flour self-rising
1 cup milk



Mix dry ingredients

Add milk slowly and stir thoroughly

Melt butter in 10 x 10 inch baking dish

Pour in mixture over butter

Pour in fruit - gently stir

Bake 350 degrees - 30 - 45 min

Jello Pumpkin Pie - Easy -  (Jello Box)
                                                                                  
1 pkg (6 serving size) Jell-O Vanilla Flavor Instant Pudding and Pie Filling
1 can (16 oz) pumpkin
1 cup milk
1/2 tsp ground nutmeg
1/2 tsp ground ginger
1/2 tsp ground cinnamon
1 cup prepared Dream Whip Whipped 
topping mix
1 Graham Cracker Ready-Crust
Combine jello pie filling mix, pumpkin, milk and spices in bowl. Mix slowly with electric mixer or hand beater just until blended, about 1 min.

Fold in whipped topping.
spoon into pie crust

Freeze until firm, 4 hours or overnight
Let stand at room temp about 30 min before cutting.

Garnish with additional whipped topping


Strawberry Pie -  (My sister, Betty, used to make this pie and not sure where she got the recipe)
                                                      
4 drops red food coloring
1 1/2 - 2 cups whole strawberries
1 small box strawberry jello
4 tbsp corn starch
1 cup sugar
1 cup water

Baked Pie Shell
whipped cream for topping
Mix jello, corn starch, sugar and water
Cook mixture until thick
Add 4 drops red food coloring

Place strawberries in cooked pie shell

Pour mixture on top of berries.

Top slices with whipped cream
